Ingredients

  • 2 cans beans (black + kidney), rinsed
  • 1 can diced tomatoes, no salt added
  • 1 onion + 1 bell pepper, chopped
  • 2 tbsp chili powder + 1 tsp cumin
  • 1 cup corn
  • 2 cups low-sodium vegetable broth

How To Make It

  1. Sauté onion and pepper in a big pot until soft.
  2. Stir in chili powder and cumin and cook 1 minute.
  3. Add beans, tomatoes, corn and broth.
  4. Simmer 20–25 minutes. Top with avocado or a dollop of Greek yogurt.
